Bereiding

Laat de champignons en de spinazie 2 uur bij kamertemperatuur ontdooien op een bord.

Klop ondertussen de eieren samen met de melk op in een kom. Snij de champignonschijfjes fijn en voeg ze samen met de spinazie, de spekblokjes en de kruiden toe aan de eieren. Kruid met versgemalen peper en zout.

Verwarm de oven voor op 200 °C (heteluchtoven 180 °C). Vet ondertussen de muffinvormpjes in met de boter. Verdeel de eiermengeling over de vormpjes en laat 20 minuten bakken tot de muffins gestold zijn.
