Bereiding

Kook de broccoliroosjes 6 minuten gaar in een kookpot met lichtgezouten water, zonder deksel. Laat ze daarna afkoelen.

Doe de quinoa in een zeef en spoel af onder stromend water. Beng de groentebouillon aan de kook in een kookpot, voeg de quinoa toe en laat 10 minuten koken om beetgaar te krijgen. Laat de quinoa vervolgens uitlekken in een zeef.

Snij de uienblokjes fijner en meng met de knoflook, peterselie, olijfolie en het citroensap tot een dressing, en kruid af met peper en zout.

Meng de quinoa en de dressing in een kom onder de broccoli.
