Eigenschappen:

Bereiding

Laat de zalm ‘s nacht ontdooien in de koelkast. Breng gezouten water aan de kook en blancheer er de erwten en de bonen in, giet af en vang het vocht op. Schrik de groenten met koud water, laat uitlekken en hou warm opzij. Snij de zalm in hapklare stukken en laat ongeveer 15 min. garen in een zeef in 1 l van het blancheervocht, zonder het te laten koken. Laat de zalm daarna voorzichtig uitlekken en hou warm opzij op een bord.

Laat in een andere kookpot de boter smelten en fruit de uienblokjes tot ze lichtbruin zien, voeg de spinazie met het blancheervocht toe en breng het geheel aan de kook. Voeg vervolgens de room en de daslook toe en laat even opkoken. Mix en voeg maïszetmeel toe voor een smeuïge consistentie

Meng de zeste en het sap van de citroen bij de zure room. Schik de groenten en de zalm op warme borden, schep de hete soep erover en werk af met de zure room met citroen.
